Use a lime wedge to moisten the outside rim of the glass and roll the rim in sea salt. Chill the glass with ice for a few minutes, then carefully discard the ice so as not to rinse the salt from the rim. Shake the mixture vigorously with a small scoop of purified ice for 20 to 30 seconds. Strain and pour. Garnish with lime or orange wedge.
The Virgin Version: equal parts lime, orange and lemon juice, an ounce of agave syrup, shake with ice and strain into a salted margarita glass, and yell “Remember the Alamo!” :-). Just kidding. That one is named the Davy Crockett.
